I learned something recently: Rice Bran contains lots of fibre. Fibre, especially the soluble kind, helps to lower the bad cholesterol (LDL) in your blood. For a good article on cholesterol, see here.
Why do I care about all this? The medication that I'm currently taking for my skin can raise cholesterol and often does other nasty things to the body. When I started these meds, I asked my Dr what I could do to ensure that I stayed healthy; she said, "eat lots of veggies, fruit, wheat and oat bran." - I couldn't believe my ears. She is my favourite Dr (yes, I have favourites), but I couldn't help pointing out that I can't eat wheat... or oats for that matter. She said I'd be fine and ushered me out of the room. See? I annoy doctors. They don't like questions.
So I went home and did some nerdy research. It turns out that most medical professionals and many reliable websites say that if you want to either lower bad cholesterol or just be healthy, to eat oat or wheat bran every day.
So what's a gluten-free girl to do?!
I thought about my current diet. It consists of rice (white), potatoes, a little bit of meat and lots of vegetables. When I eat bread or baked foods they're full of starch. White starchy starches with hardly any nutritional value. I don't need to be a dietitian to realise that's not very good.
So what can I do? First up, I'm introducing rice bran. It's full of goodies like essential amino acids, omega 3 and 6 fatty acids, lots of antioxidants and heaps of dietary fibre. Yay!

I found this recipe on glutenfree4goofs.wordpress.com. My coeliac sister and I have made several batches of these in the past month. These muffins are seriously delicious and make a really healthy snack or breakfast if you're in a hurry. YUM!

This recipe is really great because you can add any kind of flavourings you like. For example, the first time I made it I used dried cranberries. But the second time, my sister used raisins and they still tasted really great. Apple and cinnamon also works really well and I can't wait to try banana.
